Millet is an ancient, gluten-free grain that helps to release serotonin, the feel-good hormone! It is said to be good to calm and soothe your moods. It is also rich in dietary fibre, magnesium, B vitamins and calcium making great for digestion and immunity. It has a light and fluffy texture with a slightly nutty taste and can be used as an alternative for rice, couscous or even porridge! The outer casing of the millet seed has been removed, leaving the nutritious kernel intact. To cook, rinse first, and use two times more water than millet, and for porridge use three times more water or milk to millet. Store the millet grain in an airtight container and keep in a cool, dry place.
